Nolen Gur is made by slowly boiling fresh date palm sap, collected during the winter season. This sap is the life energy of the tree. If too much is taken at once, the tree becomes weak and unhealthy. That is why caring for the tree is just as important as making the gur.
To protect the tree’s strength, sap collection is paused for 3 to 4 days at regular intervals. In Bengal, this resting period is called Jiren. It allows the tree to recover naturally and continue giving high-quality sap.
Jiren is also followed when humidity rises. Moist air causes the sap to ferment quickly, which affects both safety and taste. During such times, collection is stopped to preserve purity.
